Easy Potato Chili Recipe
Ingredients
* 2 1/2 cups russet potatoes, peeled and cut into 1/2-inch cubes* 1 tablespoon vegetable oil
* 1 cup onion, chopped
* 1 green bell pepper, diced
* 1 large clove garlic, minced
* 8 ounces ground beef (you may substitute chicken)
* 2 tablespoons chili powder
* 1 cup water
* 1 28-ounce can whole tomatoes with juice
* 1 16-ounce can red kidney beans, drained and rinsed
* 1/2 teaspoon salt
* 1/4 cup freshly chopped cilantro
Directions
1. Over medium-high heat, heat oil in a large saucepan. Add onions, green pepper and garlic. Cook for 5 minutes, stirring occasionally or until softened.2. Add ground beef. Cook for an additional 5 to 6 minutes, breaking up with back of spoon.
3. Stir in chili powder. Cook for 1 minute. Add canned tomatoes, 1 cup water, potatoes, beans and salt.
4. Bring mixture to boil. Reduce heat. Simmer, covered for about 30 minutes, stirring occasionally.
5. Remove from heat. Stir in chopped cilantro.
Makes 4-6 servings
Top with shredded cheese and chopped green onion if desired. Serve hot.
