Potato Knishes Recipe


Ingredients
* 3 Yukon Gold Potatoes, cooked, peeled, gently mashed
* 1/2 cup Onions, chopped, sauteed until tender but not browned
* 2 tablespoons Cheddar Cheese
* 2 tablespoons Blue Cheese
* 1 tablespoon Reggiano Cheese
* 1 tablespoon Goat Cheese
* 2 tablespoons Heavy Cream
* 1/2 teaspoon Salt
* 1/2 teaspoon Pepper
* 1/8 teaspoon Nutmeg
* 1/2 Sheet Puff Pastry
* egg wash (1 egg, beaten lightly)
Directions
1. In a medium bowl, with a rubber spatula, combine all of the above ingredients, EXCEPT pastry and egg wash, in order given, just until mixed.
2. Cut the puff pastry into 3 1/2-inch squares. Lightly brush egg wash around edges. Fill the center of each square with 2 tablespoons of potato mixture (from step 1).
3. Gather up and overlap the sides of pastry, firmly pressing them together to seal the pastry completely closed. Brush the top with egg wash.
4. Place in freezer for 30 minutes.
5. Bake in a 365 degrees F. preheated oven for 15 minutes, until the Knishes are a deep golden brown.
6. Serve immediately.
