Potato Casserole Recipe


Potato Casserole Ingredients
* 4 tablespoons butter, divided
* 1 cup celery, diced
* 1/2 cup onion, chopped
* 2 tablespoons flour
* 2 cups milk
* 1 teaspoon salt
* 2 beef bouillon cubes
* 1 package frozen carrots, thawed
* 2 cups cooked potatoes, sliced
* 2 cups cooked ham, diced
* 1 cup bread crumbs
Directions
1. Heat 3 tablespoons of butter in a large sauce pan. Saute celery and onion until tender (4 or 5 minutes).
2. Add flour and stir until dissolved and smooth.
3. Add milk, salt, and beef bouillon.
4. Cook over low heat, stirring constantly, until thick.
5. Add carrots, potatoes, and diced meat. Mix well.
6. Pour mixture into a buttered baking dish.
7. Melt remaining tablespoon of butter and toss with bread crumbs.
8. Sprinkle the bread crumbs over top of casserole.
9. Bake in preheated 350 degree oven until hot and bubbly, about 30 minutes.
Note: Beef, pork or chicken may be substituted for ham.
Peas, broccoli, or your favorite vegetable may be substituted for the carrots.
