Potato Croquette Recipe


Potato Croquette Ingredients
* 4 large potatoes, peeled
* 1 small onion, peeled
* 2 eggs, beaten
* 3 tablespoons bread crumbs
* 2 tablespoons milk
* 2 teaspoons chives
* 1 small garlic clove, crushed
* salt and pepper, to taste
* 2 tablespoons vegetable oil
Directions
1. Grate potatoes and onion in a large bowl.
2. Add all the remaining ingredients EXCEPT vegetable oil and mix to make a thick batter.
3. Using hands, form a portion of batter into a ball, then flatten into a pancake. Repeat to make 4 to 6 pancakes.
4. Heat vegetable oil in a skillet.
5. Add the croquette's. Cook on both sides until brown and thoroughly cooked.
6. Sprinkle with salt and pepper.
Make 4 to 6 potato croquette's.
Note: Keep warm on paper towels in oven on lowest setting.
Note 2: If batter is too thin to handle with hands, add more bread crumbs. If too thick, add milk.
