Classic Potato Salad Recipe


Potato Salad Ingredients
* 5 to 6 medium potatoes
* 1 cup celery, diced
* 1/2 cup onion, diced
* 3 eggs, hard-boiled, sliced
* 1 cup mayonnaise
* 2 tablespoons vinegar
* salt and pepper to taste
* 1 teaspoon sugar
* dash of paprika
Directions
1. Peel potatoes, cut into 2 inch cubes and place into a large pot.
2. Cover with water, add a dash of salt and bring to a boil.
3. Cook until a fork pushes easily into potatoes but potatoes are still firm (about 20 minutes).
4. Remove from heat and drain.
5. Combine mayonnaise, vinegar and sugar in a large bowl. Mix well.
6. Add potatoes and remaining ingredients; toss gently to combine.
7. Add salt and pepper to taste.
7. Sprinkle a dash of paprika on top for color.
7. Cover and chill for 2 or more hours before serving.
Note: You may want to put a few slices of the hard-boiled eggs aside and place on top for garnish.
Makes 6 to 8 servings
