Fried Potato Skins Recipe
Potato Skins Ingredients
* 2 large potatoes* Oil for frying
* salt and pepper to taste
* 8 strips bacon, cooked and coarsely chopped
* 4 oz sharp cheddar cheese, shredded
* 1 cup sour cream
Directions
1. Wash potatoes and bake in oven until well done.2. After potatoes have cooled, scoop out pulp leaving about 1/4" on skins.
(make mashed potatoes with pulp later)
3. Preheat oven to 450 degrees F.
4. Heat enough oil in a skillet to cover skins and fry until golden brown.
5. Remove skins and allow oil to drain on paper towels.
6. Spread skins on a cookie sheet. Sprinkle cooked bacon and cheese over top.
7. Bake in preheated oven until cheese melts and bubbles, about 10 minutes.
8. Season with salt and pepper to taste. Top with sour cream. Makes 2 servings.
