Potato Soup Recipe


Potato Soup Ingredients
* 4 Cups potatoes, chopped
* 1/2 Cup heavy cream
* 3 Tablespoons parsley, chopped
* 3 teaspoons butter (to start)
* 3 tablespoons additional butter (at finish)
* 1/2 teaspoon garlic powder
* 3 Cups onions, chopped
* 3 Tablespoons flour
* 2 quarts water
* salt and pepper to taste
Directions
1. Melt butter in a large sauce pan.
2. Add onions and cook until tender, but not brown, about 5 minutes.
3. Stir in flour and cook for 2 minutes.
4. Gradually add water, stirring to prevent lumps.
5. Add potatoes, bring to a boil and simmer partially covered 45 minutes.
6. Just prior to serving, stir in cream, parsley, garlic powder and 3 Tablespoons more butter.
7. Simmer 5 minutes. Serve hot.
