Twice Baked Potatoes Recipe


Twice Baked Potatoes Ingredients
* 4 large potatoes

CHEESE MIX INGREDIENTS:
* 1 cup Monterey Jack cheese, shredded
* 1/3 cup Heavy cream
* 1/4 cup Sour cream
* 4 slices bacon, cooked and crumbled
* 2 tablespoons butter, softened
* 2 tablespoons green onions, sliced
* 1 teaspoon dill weed
* 1/2 teaspoon salt
Directions
1. Preheat oven to 425 degrees F.
2. Pierce surface of potatoes with fork several times.
3. Bake potatoes on oven rack 60 to 70 minutes or until tender when pierced.
4. Remove from oven and allow to cool 10 minutes.
5. While potatoes cool, combine all remaining ingredients in a large bowl.
6. Cut off top of each potato and scoop out center of each with a small spoon.
7. Add the scooped out potatoes to the cheese mixture. Mix until smooth and well blended.
8. Spoon mixture into potato shells.
9. Place stuffed potatoes on a baking sheet and place under broiler so that tops are 5 inches from heat source.
10. Broil 4 to 6 minutes or until tops are golden brown. Watch closely that they do not burn.
11. Turn off heat. Close oven door and leave potatoes in oven for an additional 7 to 10 minutes.
